Recipe | Mini Egg Cookies

Hey hunny buns,

I absolutely love Easter, but sometimes too much chocolate gets a bit boring and it’s nice to have a change to the usual chocolate eggs. I adore mini eggs and love to bake so I figured, why not make some Mini Egg cookies? This recipe makes around 14 cookies depending on how big you roll each ball.

Here’s how I make them…

🌸 Ingredients:

220g self raising flour

120g softened butter (I always use Stork)

100g caster sugar

80g brown sugar

1 large egg

1 table spoon of vanilla essence

A couple of bags of Mini Eggs (I always get three as I tend to eat them all!)

🌸 How to make delicious Mini Egg Cookies:

Pre-heat the oven to 180 degrees

Beat together the butter and both the brown and caster sugar

Add the egg and vanilla essence and beat together again

Sift the self raising flour and combine until the mixture forms a sticky dough

Next, give one bag of Mini Eggs a good bash with the rolling pin. Then pour them in the bowl and combine. (You can put them into a ziplock bag to bash them if you wish)

Roll the mixture into little balls a bit smaller than a golf ball and place on a baking tray lined with greaseproof paper.

Press whole mini eggs into the tops of the balls and squash down slightly.

Bake for 9-11 minutes and remove them whilst they’re still soft.

Once baked, remove from oven and leave them to cool and harden up slightly. Then hey presto! Yummy Mini Egg Easter Cookies!

This isn’t my typical cookie recipe, but it’s safe to say that these ones tasted amazing. I wasn’t sure if the Mini Eggs in the mixture would keep their colour but they certainly did and they look so pretty too!

I’ve enjoyed baking for years and baking cookies are my favourite thing to do, as they’re so easy and always look delish. Give them a try!
