I’ve been dead into my baking recently and am absolutely loving trying out new recipes and tweaking them slightly to suit Myles and I. We’ve recently been baking things together too which I think is really sweet, I love that he gets involved with things I enjoy. I’m particularly fond of baking as I find it therapeutic and I like making treats to enjoy together. Plus, food is definitely the best way to a mans heart!
I often bake in the evenings once our darling son has gone to bed, so try to find many quick and easy recipes – and delicious ones of course! The latest bake has been this super easy lemon drizzle cake, it doesn’t take long to prepare and is perfect for sharing with a cuppa tea! Here’s how we did it:
Ingredients
225g of salted butter
225g of caster sugar
4 hens eggs
225g of self raising flour
3 lemons
Icing sugar
The reason this recipe is super easy, is because you literally just whack all the ingredients in a bowl, mix and bake!
Method
Preheat oven to 180 degrees celsius
Grease and line a loaf dish with butter and greaseproof paper, this helps you to remove the cake from the tin easily once it’s baked.
Place the correct measurements of butter and caster sugar in a mixing bowl
Crack four eggs into the bowl containing the butter and sugar
Add the 225g of flour to the mixture

To get an extra citrus flavour to your cake, add the zest of one lemon
Squeeze the juice of two lemons and add to the other ingredients, be careful you don’t get any pips in there!

Whisk thoroughly until ingredients are combined well, then pour the mix into your pre-lined loaf dish
Bake in the oven for around 50 minutes, test if it is baked in the middle using a cake tester, skewer or tooth pick. If the cake tester comes out clean with no streaks of batter on it, your cake is baked!
Carefully remove your cake from the oven and allow to cool for a few minutes before removing it from the baking dish onto a cooling rack
Once your cake has fully cooled, mix the juice of one lemon with some icing sugar until you get a thick consistency
Drizzle icing over your cake and hey presto! You’re finished!

I love how super easy this is to do, a great one to try with kids! It takes no time at all and comes out tasting wonderfully light and fluffy with a perfect subtle zingy aftertaste you’d expect from a lemon cake!
