After mentioning these savoury muffins on my Instagram stories and in my previous blog post, I had a few people ask me how to make them. I figured I may as well write it up for future reference as they’re so tasty and fab for baby led weaning!
- 130 grams broccoli
- 150 grams self raising flour
- 1 teaspoon of baking powder
- 1 teaspoon of paprika
- 2 eggs
- 100g of grated cheddar cheese (although you could use any)
- 140ml of milk
Preheat oven to 180 degrees celsius and grease a muffin tin with fry light or a thin amount of butter.
Chop the broccoli into small pieces and fry in a pan with a splash of oil or some butter until they have softened.
Put the rest of the ingredients into a mixing bowl and add the broccoli once it has softened.
Mix well before spooning the mixture into the muffin tray. This recipe usually makes 8 muffins in total in a standard muffin tin.
Pop in the oven to bake for 20 minutes, they should be risen and golden in colour.
